# How to Make It:

01 - Blend rolled oats into a fine flour. In a bowl, mix oat flour with baking powder, salt, and optional herbs. Add Greek yogurt and egg, mixing until a soft dough forms. Let rest for a few minutes.
02 - Divide the dough into four equal parts. Roll each into a ball, then flatten and roll into 3–4 mm thick rounds using a lightly floured surface.
03 - Heat olive oil in a large non-stick skillet over medium heat. Cook two dough rounds at a time, 2–3 minutes per side until golden. Keep warm and repeat with the rest.
04 - Spread desired base sauce (such as hummus, tomato, or pesto) on warm flatbreads. Add your choice of toppings like cheese, smoked salmon, or vegetables.
05 - For melted cheese or hot toppings, place flatbreads under a hot grill or in a 200°C oven for 2–3 minutes until heated through.
06 - Top with fresh herbs, greens, or sprouts if desired. Serve immediately while warm and crisp.
