Preheat oven to 190°C. Line a baking sheet with parchment paper or use a small cast-iron skillet.

On a lightly floured surface, roll out the puff pastry to smooth and ensure it is large enough to fully enclose the brie.

Place brie in the center of the pastry. Spoon 2–3 tablespoons of red preserves onto the top. Optionally, sprinkle with nuts and herbs.

Fold the pastry over the brie, gathering at the top and pinching to seal.

In a small bowl, whisk egg with water or milk. Brush the pastry with the egg wash for a glossy finish.

Transfer the wrapped brie to the prepared baking sheet or skillet and bake for 20–25 minutes, until pastry is puffed and deep golden brown.

Allow to cool for 5 minutes. Warm the remaining red jam, then drizzle over the baked brie, letting it drip down the sides.

Transfer to a platter or serve in the skillet. Offer with crackers, toasted baguette slices, or apple wedges.
