Combine granulated sugar, corn syrup, and water in a medium saucepan. Stir gently over medium heat until the sugar is fully dissolved.

Increase heat and bring the mixture to a boil. Using a candy thermometer, cook until the temperature reaches 150°C. This should take about 10 to 15 minutes.

Remove the saucepan from heat. Quickly stir in vanilla extract and chopped nuts until evenly distributed.

Carefully pour the hot mixture onto a well-greased baking sheet and spread evenly. Let cool completely at room temperature, about 30 minutes.

Once fully cooled, break the candy into pieces. If desired, melt chocolate chips and drizzle over the top; let set before serving.
