Chicken Scampi Parmesan Rice (Print-Friendly Version)

# What You'll Need:

→ For the Chicken Scampi

01 - 1 pound chicken breasts, cut into 2-inch strips
02 - Salt, to taste
03 - 1 teaspoon lemon pepper seasoning
04 - 1/2 teaspoon garlic powder
05 - 2 tablespoons olive oil

→ For the Garlic Parmesan Rice

06 - 1 stick unsalted butter
07 - 2 tablespoons minced garlic
08 - 1/4 teaspoon red pepper flakes
09 - 1 1/2 teaspoons salt, divided
10 - 1/2 cup dry white wine
11 - 1 to 2 tablespoons fresh lemon juice
12 - 1 1/2 cups uncooked jasmine or long-grain white rice
13 - 3 cups chicken broth
14 - 1/2 cup freshly grated Parmesan cheese

→ For Garnish

15 - 2 tablespoons finely chopped fresh parsley
16 - 2 tablespoons crispy toasted breadcrumbs (optional)

# How to Make It:

01 - Season the chicken strips with salt, lemon pepper seasoning, and garlic powder. Heat olive oil in a large skillet over medium heat. Add chicken and sauté until golden brown and cooked through, about 3–4 minutes per side. Remove and keep warm.
02 - In the same skillet, melt butter over medium heat. Add minced garlic, red pepper flakes, and 1/2 teaspoon salt. Sauté for 1 minute until fragrant. Stir in white wine and simmer for 5 minutes until reduced by half. Add lemon juice, stir, and reserve 2 tablespoons of sauce.
03 - Add uncooked rice, chicken broth, and remaining 1 teaspoon salt to the skillet. Bring to a boil, reduce heat to low, cover, and simmer for 15–20 minutes until rice is tender. Stir occasionally.
04 - Stir grated Parmesan into the cooked rice. Return chicken to the skillet and place on top of the rice. Drizzle with reserved garlic butter sauce. Garnish with parsley and breadcrumbs, if using.
