# What You'll Need:

→ Main

01 - 2 cups cold cooked white jasmine rice
02 - 1 1/2 cups mixed mushrooms, sliced (cremini, shiitake, oyster, maitake)
03 - 1 tablespoon neutral oil
04 - 1 tablespoon sesame oil
05 - 2 tablespoons soy sauce or tamari
06 - 1 tablespoon maple syrup
07 - 1 teaspoon miso paste
08 - 1/2 teaspoon mushroom seasoning
09 - 2 green onions, white and green parts separated
10 - 2 cloves garlic, thinly sliced

# How to Make It:

01 - In a bowl, whisk together soy sauce, sesame oil, maple syrup, miso paste, and mushroom seasoning until combined.
02 - Heat neutral oil in a pan over medium-high heat. Add mushrooms in a single layer and cook undisturbed until browned, then flip and cook until liquid evaporates.
03 - Push mushrooms to one side, add more oil if needed, and sauté the white part of green onions with garlic until fragrant.
04 - Add cold rice to the pan, breaking apart clumps with a spatula, and mix evenly with the mushrooms and aromatics.
05 - Pour in the prepared sauce and toss well until the rice is evenly coated and colored. Adjust seasoning to taste if needed.
06 - Top with the green part of the onions and serve warm as a main or side dish.

# Additional Tips:

01 - Use day-old cold rice for optimal texture and to avoid mushiness.
02 - Allow mushrooms to brown undisturbed for deeper flavor development.
