Crisp zucchini fritters paired with tangy sour cream and fresh chives make a savory appetizer or light meal.

# What You'll Need:

→ Fritters

01 - 500 g zucchini, grated
02 - 1 teaspoon fine sea salt
03 - 2 large eggs, beaten
04 - 60 g all-purpose flour
05 - 40 g Parmesan cheese, finely grated
06 - 0.5 teaspoon black pepper, freshly ground
07 - 0.5 teaspoon garlic powder
08 - 3 tablespoons olive oil

→ Topping

09 - 120 g sour cream
10 - 1 small garlic clove, minced
11 - Salt, to taste
12 - Black pepper, to taste
13 - 40 g cream cheese
14 - 2 tablespoons fresh chives, finely chopped

# How to Make It:

01 - Place grated zucchini in a colander, sprinkle with salt, and let sit for 10–15 minutes to extract moisture. Squeeze thoroughly in a clean kitchen towel to remove excess liquid.
02 - In a large mixing bowl, combine squeezed zucchini, flour, Parmesan, black pepper, and garlic powder. Add beaten eggs and mix until a cohesive batter forms.
03 - Heat olive oil in a skillet over medium heat. Scoop tablespoonfuls of batter into the skillet, flatten gently. Fry 2–3 minutes per side until golden brown and crisp. Cook in batches if necessary to avoid overcrowding.
04 - While fritters cook, combine sour cream, minced garlic, salt, and black pepper in a small bowl. Mix until smooth.
05 - Arrange fritters on a serving platter. Add a small dollop of cream cheese to each, then spoon over the sour cream mixture. Garnish generously with chopped fresh chives.

# Additional Tips:

01 - For optimal crispness, dry zucchini thoroughly before mixing with other ingredients.
