12 - 2 teaspoons olive oil, divided

# How to Make It:

01 - Pierce sweet potato with a fork, drizzle with 1 teaspoon olive oil, and microwave for 8 minutes until tender. Let cool, then mash.
02 - Dice red and orange bell peppers and jalapeño. Sauté in 1 teaspoon olive oil over medium heat for 5 to 7 minutes.
