Dice red and orange bell peppers and jalapeño. Sauté in 1 teaspoon olive oil over medium heat for 5 to 7 minutes.

Add black beans, corn, and taco seasoning to the skillet. Cook for 3 minutes, then remove from heat and set aside.

Spread butter on one side of a tortilla. On the other side, layer mashed sweet potato, avocado, sautéed vegetables, and cheese.

Place tortilla buttered-side down in a skillet over medium heat. Cook until golden and cheese is melted. Fold and remove from pan.
