Vegan Chili Beans Stew (Print-Friendly Version)

01 - 2 tablespoons olive oil
02 - 1 large yellow onion, diced
03 - 3 cloves garlic, minced
04 - 2 bell peppers, diced (any color)
05 - 2 medium carrots, diced
06 - 400 grams black beans, drained and rinsed
07 - 400 grams kidney beans, drained and rinsed
08 - 400 grams diced tomatoes, with juice
09 - 2 tablespoons tomato paste
10 - 400 millilitres vegetable broth
11 - 150 grams corn kernels (fresh or frozen)
12 - 2 teaspoons chili powder
13 - 1 teaspoon ground cumin
14 - 1 teaspoon smoked paprika
15 - 1 teaspoon dried oregano
16 - 1 teaspoon salt, or to taste
17 - 0.5 teaspoon ground black pepper
18 - 2 tablespoons lime juice (freshly squeezed)

# How to Make It:

01 - Dice the onion, bell peppers, and carrots. Mince the garlic.
02 - In a large pot, heat olive oil over medium heat.
03 - Add diced onion and sauté for 5 minutes until translucent. Add minced garlic and cook for 1 minute, stirring to avoid burning.
04 - Add diced bell peppers and carrots. Cook, stirring occasionally, for 5–7 minutes until vegetables begin to soften.
05 - Stir in black beans, kidney beans, diced tomatoes with juice, and tomato paste. Mix thoroughly.
06 - Add chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Stir until all ingredients are well combined.
07 - Pour in the vegetable broth, bring the mixture to a boil, then reduce the heat and let simmer, uncovered, for 20–25 minutes to allow flavors to meld.
08 - Stir in corn kernels and cook for an additional 5 minutes.
09 - Remove from heat and stir in fresh lime juice immediately before serving.
10 - Ladle into bowls, garnish with chopped fresh cilantro if desired, and serve hot.

01 - For a richer flavor, prepare chili several hours ahead or allow to rest overnight for the spices to further develop.
