11 - 4 tablespoons red curry paste
12 - 2 teaspoons lemongrass paste or 2 lemongrass stalks
13 - 2 teaspoons fresh ginger, finely grated
14 - 2 cloves garlic, minced
15 - 1 cup chicken broth
16 - 14 ounces coconut milk (1 can)
17 - 5 kaffir lime leaves, fresh or dried
18 - 1 tablespoon sugar

# How to Make It:

01 - Preheat oven to 375°F. Line a baking sheet with parchment paper.
02 - In a medium bowl, mix all the meatball ingredients thoroughly. Form the mixture into small 1-inch meatballs, yielding about 20 to 25. Arrange them on the prepared baking sheet and bake for about 30 minutes or until fully cooked.
03 - Heat the oil in a large skillet or braiser over medium-high heat. Add the curry paste, lemongrass paste, garlic, and ginger. Stir and cook for 2 minutes.
04 - Add the chicken broth and stir until the curry paste dissolves. Stir in the coconut milk, then add the kaffir lime leaves and sugar. Bring to a boil, then reduce the heat and simmer for 5 minutes. Adjust salt and pepper to taste.
05 - Gently add the baked meatballs to the sauce and cook for another 5 minutes, stirring occasionally. Remove the kaffir lime leaves before serving.
