Combine the mayonnaise, mustard, and dried dill in a small bowl. Store the sauce in the refrigerator until needed to allow flavours to blend.

Melt 1 tablespoon of unsalted butter in a skillet over medium heat. Add the sliced onion and salt. Cook, stirring occasionally, for 5 to 7 minutes until the onions are softened and lightly caramelised. Remove from skillet and set aside.

Add another tablespoon of butter to the same skillet. Pour in the beaten eggs and gently scramble over medium heat until just set but still moist. Remove from heat and divide evenly in two portions.

Place shaved steak in a mixing bowl. Add Worcestershire sauce and Montreal steak seasoning. Toss to coat steak thoroughly.

Melt the remaining tablespoon of butter in the skillet over medium heat. Add the seasoned shaved steak in an even layer and sauté for 2 to 3 minutes until browned and fully cooked. Return caramelised onions to the skillet, stir to combine, and divide mixture into two equal mounds. Top each mound with one slice of American cheese to melt.

Toast bagels until lightly golden either in a toaster or on the skillet.

Spread the prepared sauce onto each bagel half. Place a portion of scrambled eggs on the bottom half of each bagel, then top with the steak, onion, and melted cheese. Complete each with the top bagel half.

Serve sandwiches immediately while warm. Optionally, customise with desired toppings such as lettuce, tomato, or pickles.
