Spooky Sausage Beef Stew (Print-Friendly Version)

# What You'll Need:

→ Meats

01 - 200 g hot breakfast sausage (mild sausage as alternative)
02 - 200 g ground beef

→ Vegetables

03 - 2 medium carrots, cut into pumpkin shapes
04 - 150 g white mushrooms, prepared with skull-shaped cutouts
05 - 2 medium gold potatoes, diced
06 - 2 cloves garlic, minced
07 - 1 leek, cleaned and sliced
08 - 2 celery stalks, chopped

→ Liquids and Broths

09 - 480 ml Campbell’s tomato soup
10 - 284 ml Campbell’s French onion soup
11 - 720 ml beef broth

→ Seasonings

12 - 1 tbsp Italian herb seasoning blend
13 - Salt and freshly ground black pepper, to taste

→ Optional Toppings

14 - Parmesan or mozzarella cheese, for serving

# How to Make It:

01 - In a large skillet over medium-high heat, cook the ground beef and hot breakfast sausage together. Crumble thoroughly and drain excess fat.
02 - Place the cooked and drained meats into the slow cooker basin.
03 - Create pumpkin shapes by making two vertical slits for the stem on each carrot, cut out triangle shapes at the stem sides, then slice to form pumpkin-shaped pieces.
04 - Add the carrot pumpkins, diced potatoes, minced garlic, sliced leeks, and chopped celery to the slow cooker. Pour in the tomato soup and French onion soup. Hold off adding mushrooms until later.
05 - Pour beef broth into the slow cooker. Set to HIGH and cook for 4 hours.
06 - Use a standard straw to create eye holes in each mushroom cap by pushing through the straw. Cut two slits for the nose and additional slits along the mushroom stem to resemble a collar.
07 - Add the prepared skull mushrooms to the slow cooker and cook for an additional 10 minutes to retain shape.
08 - Ladle stew into bowls and optionally top with Parmesan or mozzarella cheese. Serve with garlic bread or crackers as desired.

01 - To freeze, omit mushrooms and add them fresh after thawing and reheating. Vegetarian or vegan variations require substituting meats with plant-based alternatives and omitting dairy toppings.
