# How to Make It:

01 - In a skillet over medium heat, brown the pork sausage while breaking it into small pieces until fully cooked and lightly crisp. Sprinkle flour over the sausage and stir thoroughly. Cook for one minute, then gradually add milk while whisking. Simmer for 5 minutes until thickened, seasoning with salt, black pepper, and garlic powder. Keep the gravy warm.
02 - Whisk together eggs, milk, a pinch of salt, and black pepper. Melt butter in a nonstick skillet over medium heat, then pour in the egg mixture. Cook gently, stirring regularly, until the eggs are just set but still soft. Remove from heat.
03 - Preheat oven to 190°C. Grease a large baking dish. Lay out the flour tortillas and fill each with scrambled eggs, cooked potatoes, both cheeses, and sliced green onions. Roll up tightly and place seam side down into the prepared dish.
04 - Pour the hot sausage gravy evenly over the filled tortillas, ensuring the edges are covered. Optionally, sprinkle with extra cheese if desired.
05 - Cover with foil and bake for 15 minutes. Remove the foil and continue baking 5–10 minutes, until the dish is bubbling and hot. Top with additional green onions and serve hot with your choice of hot sauce.
