Season chicken pieces with salt, freshly ground black pepper, and garlic powder on all sides. Transfer to slow cooker insert.

Add diced tomatoes, tomato paste, chicken broth, diced onion, minced garlic, dried basil, oregano, thyme, and red pepper flakes (if using) over the chicken. Gently stir to combine all ingredients.

Cover slow cooker with lid and cook on low heat setting for 6-7 hours or high heat setting for 3-4 hours until chicken is tender and easily pulls apart.

Remove chicken from the slow cooker. Either shred using two forks or leave pieces whole according to preference. Return chicken to the sauce and stir to coat thoroughly.

Serve hot over cooked pasta, rice, or with crusty bread. Sprinkle with grated parmesan cheese and garnish with fresh herbs if desired.
