# How to Make It:

01 - Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions. Reserve 120 ml of pasta water, then drain the pasta.
02 - Heat half the oil in a large skillet over medium-high heat. Season the thinly sliced steak with oregano, salt, and black pepper. Sear the steak in batches for 1–2 minutes per side without overcrowding. Transfer steak to a plate and set aside.
03 - Add the remaining oil to the skillet. Sauté onions and garlic over medium heat for 2 minutes until fragrant. Add mushrooms, green pepper, and red pepper, and cook for 5 minutes until vegetables are softened yet retain some crispness.
04 - Deglaze the skillet with beef broth, scraping up any browned bits from the pan. Bring to a gentle simmer. Add shredded provolone and stir until melted into a smooth sauce.
05 - Return seared steak to the skillet. Add cooked rotini and toss to coat evenly in the cheese sauce. Adjust sauce consistency with reserved pasta water if needed. Serve immediately, garnished with fresh parsley if desired.
