# What You'll Need:

→ Salad Base

01 - 2 cups cooked and cooled white or brown rice
02 - 1 cup cherry tomatoes, halved
03 - 1 cucumber, diced or chopped
04 - ½ cup kalamata olives, sliced or whole
05 - ½ cup crumbled feta cheese
06 - ¼ cup red onion, finely chopped
07 - ¼ cup chopped fresh parsley
08 - 1 tbsp chopped fresh mint

→ Dressing

09 - ¼ cup olive oil
10 - 2 tbsp lemon juice
11 - 1 tsp red wine vinegar
12 - 1 garlic clove, minced
13 - Salt and black pepper, to taste
