Season the chicken thighs on both sides with a bit of salt.

In a large skillet or frying pan, heat a splash of oil over medium-high heat. Add the chicken skin-side down (if using skin-on) and let them sear for about 7 to 10 minutes per side until beautifully browned and crisp on the outside. If too much fat renders out, carefully spoon some off and set it aside for later use.

While the chicken is browning, whisk together the soy sauce, honey, garlic, water, and lemon juice in a small bowl. Taste the sauce and adjust for flavor as needed. Add more lemon juice if you prefer a tangier flavor or more honey for additional sweetness.
