→ Chicken Preparation

09 - 4 boneless, skinless chicken cutlets (approx. 170 g each)
10 - 15 g all-purpose flour
11 - 5 ml Italian seasoning

12 - 30 ml extra-virgin olive oil
13 - 15 g unsalted butter
14 - 2 garlic cloves, finely chopped
15 - 1.25 ml crushed red pepper flakes
16 - 15 g fresh basil leaves, torn, plus extra for garnish

# How to Make It:

01 - Combine chicken bone broth, heavy cream, cottage cheese, sun-dried tomatoes, Parmesan, and tomato paste in a blender. Puree until smooth, then season with kosher salt and freshly ground black pepper.
02 - Pat chicken cutlets dry and season both sides evenly with kosher salt and freshly ground black pepper. Lightly dust with all-purpose flour and Italian seasoning, pressing gently to adhere.
03 - Heat extra-virgin olive oil in a large skillet over medium-high heat. Cook chicken cutlets in batches if necessary, approximately 5 minutes per side, until golden brown and cooked through. Transfer cooked chicken to a plate and allow to rest for 5 minutes.
04 - Reduce heat to medium-low and melt unsalted butter in the same skillet. Add finely chopped garlic and crushed red pepper flakes. Stir and scrape the browned bits from the skillet bottom until fragrant, about 30 seconds.
05 - Return chicken and any accumulated juices to the skillet. Pour the blended sauce over the chicken and add torn fresh basil leaves. Cook gently, spooning sauce over chicken, until sauce slightly thickens, approximately 5 to 7 minutes. Adjust seasoning with salt and black pepper as needed.
06 - Plate chicken cutlets and top with additional grated Parmesan and fresh basil leaves. Serve immediately.
