Smoky grilled chicken paired with caramelized peaches, fresh greens, and creamy goat cheese in a sweet-savory summer bowl.

# What You'll Need:

→ Main Ingredients

01 - 2 boneless, skinless chicken breasts
02 - 2 ripe peaches, halved
03 - 6 cups mixed greens (arugula, spinach, baby kale)
04 - ½ cup cherry tomatoes, halved
05 - ¼ red onion, thinly sliced
06 - ¼ cup crumbled goat cheese or feta
07 - ¼ cup pecans or walnuts, toasted
08 - Olive oil, for brushing
09 - Salt and black pepper, to taste

→ Dressing

10 - 3 tbsp olive oil
11 - 1 tbsp balsamic vinegar
12 - 1 tsp Dijon mustard
13 - 1 tsp honey
14 - Salt and pepper, to taste

# How to Make It:

01 - Preheat your grill or grill pan over medium-high heat. Brush chicken breasts and peach halves with a little olive oil and season the chicken with salt and pepper. Grill the chicken for about 5–6 minutes per side, or until cooked through. Let rest before slicing. Grill the peach halves cut-side down for 2–3 minutes, until charred and caramelized. Slice once slightly cooled.
02 - In a small jar or bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper.
03 - Divide mixed greens between four bowls. Top with sliced chicken, grilled peach slices, cherry tomatoes, onion, goat cheese, and toasted nuts.
04 - Drizzle with dressing just before serving and crack over a little extra black pepper if you'd like.

# Additional Tips:

01 - When peaches are at their juicy peak and the grill is calling, this salad bowl balances sweet and savory flavors perfectly.
