Pat halloumi cubes dry and add to the marinade. Gently toss to coat and let sit for at least 10 minutes.

Thread marinated halloumi, lemon slices, red onion chunks, and cherry tomatoes onto skewers, alternating ingredients for balance. Brush remaining marinade over the assembled skewers.

Heat a grill or grill pan over medium-high. Lightly oil the grates to prevent sticking.

Place skewers on the hot grill and cook for 2–3 minutes per side, turning periodically, until halloumi is golden and vegetables are tender.

Transfer grilled skewers to a platter. Garnish with fresh thyme sprigs and, if desired, drizzle with olive oil or sprinkle with crushed red pepper flakes before serving.
