Grilled Halloumi Lemon Thyme Skewers (Print-Friendly Version)

Halloumi, lemon, and thyme bring bright flavor to these easy grilled skewers with colorful vegetables.

# What You'll Need:

→ Skewers

01 - 1 block halloumi cheese (225–280 g), cut into 2.5 cm cubes
02 - 1 lemon, sliced into thin rounds or wedges
03 - 1 medium red onion, cut into chunks
04 - 250 g cherry tomatoes

→ Marinade

05 - 45 ml extra-virgin olive oil
06 - 30 ml freshly squeezed lemon juice
07 - 1 tablespoon fresh thyme, finely chopped or 1 teaspoon dried thyme
08 - 2 garlic cloves, minced
09 - 1 teaspoon honey
10 - Salt, to taste
11 - Freshly ground black pepper, to taste

→ Garnishes (optional)

12 - Fresh thyme sprigs
13 - Crushed red pepper flakes

# How to Make It:

01 - In a small bowl, whisk together olive oil, lemon juice, chopped thyme, minced garlic, honey, salt, and black pepper.
02 - Pat halloumi cubes dry and add to the marinade. Gently toss to coat and let sit for at least 10 minutes.
03 - Thread marinated halloumi, lemon slices, red onion chunks, and cherry tomatoes onto skewers, alternating ingredients for balance. Brush remaining marinade over the assembled skewers.
04 - Heat a grill or grill pan over medium-high. Lightly oil the grates to prevent sticking.
05 - Place skewers on the hot grill and cook for 2–3 minutes per side, turning periodically, until halloumi is golden and vegetables are tender.
06 - Transfer grilled skewers to a platter. Garnish with fresh thyme sprigs and, if desired, drizzle with olive oil or sprinkle with crushed red pepper flakes before serving.
