Whisk together soy sauce, shaoxing wine, honey, sesame oil, minced ginger, minced garlic, red pepper flakes, and sambal oelek in a measuring cup until well blended.

Transfer marinade to a resealable plastic bag. Add flat iron steaks, seal, and massage to fully coat meat. Refrigerate for a minimum of 3 hours.

Preheat an outdoor grill to medium-high heat.

Remove steaks from marinade and place directly on the grill. Reserve marinade liquid. Cook steaks to preferred doneness, turning once midway.

Pour reserved marinade into a small saucepan over medium heat. Simmer until reduced by half, approximately 10–15 minutes, until slightly thickened.

Arrange grilled steaks on a platter. Drizzle with the reduced marinade and serve immediately.
