Greek Chicken Souvlaki (Print-Friendly Version)

Juicy chicken marinated with garlic, oregano and lemon juice, then grilled to perfection for an authentic Mediterranean flavor.

# What You'll Need:

→ Chicken and Marinade

01 - 1½ pounds chicken breast, skinless and boneless, cut into bite-sized pieces
02 - 5 cloves garlic, minced
03 - 2 tablespoons dried oregano
04 - ½ teaspoon salt, or to taste
05 - ¼ teaspoon pepper, or to taste
06 - ¼ cup olive oil
07 - 3 tablespoons lemon juice, from 1 lemon

# How to Make It:

01 - Add all the ingredients to a large sealable freezer bag or airtight container. Mix everything together well to coat each piece of chicken. Marinate for at least 2 hours, up to overnight.
02 - Soak wooden skewers by placing them in a large baking dish or roasting pan and covering them with water by at least 1/2 inch. Soak for 1-2 hours.
03 - Preheat your grill to medium-high heat. Skewer the pieces of chicken, leaving about 1/2 inch on the end of each skewer. You should get approximately 6 skewers.
04 - Place the skewers on the grill and cook for about 3 minutes per side, or until completely cooked through. Transfer the skewers to a plate and let the chicken rest for 5 minutes before serving.

# Additional Tips:

01 - Leftovers can be refrigerated in an airtight container for 3-4 days.
02 - For make-ahead preparation, freeze raw marinated chicken on skewers in a single layer. Thaw overnight in the fridge before grilling.
