In a large bowl, combine olive oil, lemon juice, minced garlic, and Greek seasoning.

Add the cubed beef to the marinade and toss thoroughly to coat each piece. Cover and refrigerate for at least 3 hours to allow flavours to develop.

Preheat outdoor grill to high heat. If using wooden skewers, soak them in water during this time. Metal skewers may be used without soaking.

Thread marinated beef onto skewers, distributing pieces evenly.

Place skewers on the preheated grill. Cook, turning occasionally, until beef reaches desired doneness: rare (52°C), medium-rare (55–57°C), medium (57–63°C), medium-well (63–68°C), or well done (68°C).

Allow skewers to rest briefly off heat before serving. Sprinkle with fresh parsley.

Serve immediately, accompanied by rice, tzatziki sauce, pita bread, or red onions as desired.
