In a small bowl, combine butter, pesto, and chopped parsley until evenly mixed. Spread the mixture generously onto the cut sides of both ciabatta halves.

Place the prepared ciabatta halves in an air fryer or under a broiler. Toast until the bread is golden and crisp, approximately 2–3 minutes.

Arrange cooked ham, spicy salami, and pancetta over the bottom half of the ciabatta. Layer with sliced tomato and season with kosher salt.

Top with slices of Monterey Jack cheese. Return the open sandwich to the air fryer or oven until the cheese is fully melted.

Season with freshly ground black pepper. In a separate bowl, mix shredded cabbage with Caesar dressing. Place a generous layer of coleslaw on top of the melted cheese.
