Preheat oven to 220°C. Grease a large baking sheet and cut carrots into diagonal pieces of similar size and thickness.

Melt butter in a saucepan over medium heat. Add minced garlic and cook for 3 minutes, stirring occasionally, until lightly golden. Remove from heat and blend in honey until a smooth mixture forms.

Place sliced carrots in a mixing bowl. Pour garlic-honey butter over the carrots, add salt and black pepper, and toss to coat evenly.

Arrange coated carrots in a single layer on the prepared baking sheet. Roast in the oven for 22–25 minutes, stirring once halfway, until carrots are tender and caramelised at the edges.

Taste and adjust seasoning if necessary. Transfer roasted carrots to a serving dish and garnish with chopped fresh parsley. Serve warm.
