01 -
Preheat the oven to 400°F (200°C). Cut the top off a whole head of garlic to expose the tops of the cloves, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft, golden, and fragrant. Allow to cool for easier handling.
02 -
Melt the butter in a saucepan over medium heat, whisk in the flour to form a roux, then gradually whisk in the milk. Add grated Parmesan cheese, salt, and pepper, and simmer for 3-5 minutes until thick and creamy. Set aside.
03 -
Increase oven temperature to 475°F (245°C) and preheat a pizza stone or baking sheet.
04 -
Roll out the pizza dough on a lightly floured surface to desired thickness and transfer to parchment paper if using a pizza stone.
05 -
Spread the white sauce evenly over the dough, leaving a small crust border. Squeeze roasted garlic cloves onto the pizza and mash lightly. Add shredded or diced chicken, sprinkle with mozzarella cheese, and dust with Italian seasoning.
06 -
Slide the pizza onto the preheated stone or baking sheet and bake for 10-12 minutes until the crust is golden and cheese is melted and bubbling.
07 -
Remove pizza from the oven, allow to cool slightly, and garnish with chopped parsley or basil if desired. Serve warm.
