Spread the seasoned potatoes evenly onto the prepared baking sheet. Nestle the chicken breasts between the potatoes. Drizzle 1 tbsp olive oil over the chicken.

Bake for 35-40 minutes, flipping the chicken halfway through, until the chicken is golden brown and reaches 165°F (75°C) internal temperature. If the potatoes need extra crispiness, broil for 2-3 minutes at the end.
