Place the chicken drumsticks in a baking dish and season with salt and pepper.

Heat a heavy-based pan over medium heat and add the vegetable oil. Add the garlic, paprika, dried chilli flakes, dried oregano, and most of the fresh parsley (reserve some for garnish). Allow the spice mix to gently sizzle for about 1 minute, stirring constantly to prevent burning.

Pour the hot spice and oil mixture over the chicken drumsticks, ensuring all surfaces are thoroughly coated.

Bake in the preheated oven for 45 minutes, or until the chicken is completely cooked through.

Garnish with the remaining parsley leaves and serve with your choice of side dishes.
