Tender chicken in garlic parmesan cream sauce with zucchini, peppers, and rice for a quick, flavorful dinner.

# What You'll Need:

→ Protein

01 - 400 grams chicken breast fillets, trimmed
02 - 3 grams salt
03 - 2 grams cracked black pepper
04 - 2 grams dried oregano or Italian herb blend

→ Vegetables

05 - 3 cloves garlic, minced
06 - 1 medium red bell pepper, sliced (about 150 grams)
07 - 1 medium zucchini, sliced (about 150 grams)
08 - 100 grams cherry tomatoes, halved
09 - 5 grams fresh parsley, chopped

→ Dairy & Fats

10 - 15 grams unsalted butter
11 - 15 milliliters olive oil
12 - 120 milliliters heavy cream
13 - 30 grams freshly grated Parmesan cheese

→ Starch

14 - 240 grams cooked white rice (preferably jasmine or basmati)

# How to Make It:

01 - Pat chicken breasts dry with paper towels. Season both sides evenly with salt, cracked black pepper, and dried oregano or Italian herbs.
02 - Heat butter and olive oil together in a large skillet over medium-high heat. Place chicken breasts in a single layer and sear without moving for 4 to 5 minutes per side until deeply golden. Remove from the skillet and loosely cover to keep warm.
03 - In the same skillet, add minced garlic, sliced red bell pepper, zucchini, and halved cherry tomatoes. Sauté gently for 4 to 5 minutes until vegetables are bright and just starting to soften without losing texture.
04 - Lower heat to low and pour in the heavy cream, scraping the skillet bottom to deglaze and lift browned bits. Stir in freshly grated Parmesan cheese and whisk until the sauce thickens and becomes glossy, about 2 to 3 minutes. Avoid boiling.
05 - Return the seared chicken breasts to the skillet, nestling them into the sauce. Simmer gently for 3 to 4 minutes, occasionally spooning sauce over the chicken to blend flavors and ensure thorough heating.
06 - Spoon cooked white rice onto plates. Ladle the creamy chicken and vegetable mixture on top. Garnish with chopped fresh parsley for a vibrant finish. Drizzle extra sauce as desired.

# Additional Tips:

01 - Use freshly grated Parmesan for optimal melting and flavor. Do not rush vegetable sautéing to maintain their crispness and color. To make it dairy-free, substitute heavy cream with coconut cream.
