# What You'll Need:

→ Roast Chicken

01 - 1 whole chicken (approximately 1.8–2.3 kg), cleaned and patted dry
02 - 2 tablespoons (30 ml) olive oil
03 - 1 tablespoon (8 g) garlic powder
04 - 1 tablespoon (7 g) onion powder
05 - 1 tablespoon (7 g) paprika
06 - Salt and freshly ground black pepper, to taste
07 - Fresh herbs (rosemary, thyme, or parsley) for garnish

→ Roasted Potatoes

08 - 4 large potatoes (about 1.2 kg), peeled and cut into cubes
09 - 2 tablespoons (30 ml) olive oil
10 - Salt and freshly ground black pepper, to taste
11 - 1 teaspoon (1 g) dried rosemary

→ Mixed Green Salad

12 - 4 cups (120 g) mixed salad greens (spinach, arugula, romaine)
13 - 1 cup (150 g) cherry tomatoes, halved
14 - 1 cucumber (200 g), sliced
15 - 1/4 red onion (20 g), thinly sliced
16 - 1/4 cup (60 ml) balsamic vinaigrette

# How to Make It:

01 - Set the oven to 220°C (425°F) and allow it to fully preheat.
02 - Combine 2 tablespoons olive oil, garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Massage the mixture thoroughly over the entire surface of the chicken.
03 - Place the prepared chicken breast-side up in a roasting pan. Roast for approximately 75 minutes, or until the internal temperature at the thickest part of the thigh reaches 75°C. Let rest for 10 minutes before carving.
04 - While the chicken is roasting, toss cubed potatoes with 2 tablespoons olive oil, salt, pepper, and dried rosemary until evenly coated.
05 - Arrange the potatoes in an even layer on a baking sheet. Roast in the oven alongside the chicken for the final 30–35 minutes until golden and crisp.
06 - In a large bowl, gently combine mixed greens, cherry tomatoes, cucumber slices, and red onion. Drizzle with balsamic vinaigrette and toss just before serving.
07 - Carve the rested chicken and serve with roasted potatoes and mixed green salad. Garnish with fresh herbs as desired.
