Wash and dry cucumbers thoroughly. Slice into long, thin ribbons using a mandoline or vegetable peeler.

Pat the cucumber ribbons with a paper towel to remove excess moisture and prevent sogginess.

Combine cottage cheese, chopped herbs, lemon juice, salt, and pepper in a bowl. Stir in optional seasonings if using.

Lay 2 to 3 cucumber ribbons slightly overlapping. Place a spoonful of cheese mixture at one end and roll tightly.
