Add the sliced onions and half of the sliced bell peppers to the bottom of the slow cooker.

Place the chicken breasts (or thighs) on top of the vegetables. In a small bowl, mix together all fajita seasoning ingredients, then sprinkle the blend evenly over the chicken.

Pour in the chicken broth, lime juice, olive oil, and diced tomatoes with green chilies (if using).

Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily shreds.

Remove the chicken from the slow cooker and shred it using two forks. Return it to the cooker and stir to coat in the juices.

Stir in the remaining sliced bell peppers and let them cook for another 20-30 minutes on high. This preserves their texture for authentic fajitas.

Serve immediately in warm tortillas with your choice of toppings or store properly for later use.
