01 - 4 chicken breast halves, boneless and skinless
02 - ¾ cup all-purpose flour
03 - 2 large eggs, beaten
04 - ¼ cup vegetable oil or olive oil for frying

→ Breadcrumb Mixture

05 - ¾ cup panko breadcrumbs
06 - ¾ cup regular breadcrumbs
07 - ½ cup parmesan cheese, grated
08 - ½ teaspoon salt, or to taste
09 - ½ teaspoon pepper, or to taste

→ Toppings

10 - 1 cup marinara sauce
11 - 1 cup mozzarella cheese, shredded
12 - ½ cup parmesan cheese, grated
13 - 2 leaves basil, chopped

# How to Make It:

01 - Preheat your oven to 425℉.
02 - Place the chicken breasts, one at a time, between two pieces of parchment paper. Using the flat side of a meat mallet, pound the chicken until about ½ inch (1 cm) thick. Repeat with remaining breasts.
03 - Place the flour in a shallow plate, and do the same with the eggs. In another shallow plate, mix the breadcrumb mixture together.
04 - Dredge the chicken through the flour, one piece at a time, coating fully on both sides, then dip into the egg mixture. Finally, dredge through the breadcrumb mixture on both sides. Transfer to a baking sheet and repeat with remaining chicken breasts.
05 - Preheat the oil in a large skillet or frying pan to 375℉-400℉. Fry the chicken in batches, adding two pieces at a time and browning on both sides until golden, about 4 minutes per side. Repeat with remaining chicken.
06 - Place the fried chicken on a baking sheet. Top each piece with about ¼ cup of marinara sauce, and sprinkle ¼ cup of mozzarella cheese and ¼ of the parmesan cheese on each piece.
07 - Transfer the baking sheet to the oven and bake for about 20 minutes, or until the cheese has melted and is bubbly. Sprinkle with basil and serve over spaghetti.
