# How to Make It:

01 - Heat oil in a large skillet over high heat. Sear the brisket fat-side down until deeply browned, then turn and brown the other side. Transfer to slow cooker.
02 - Pour beef broth and whole grain mustard into the same skillet. Scrape up any browned bits and simmer. Pour this mixture over the brisket in the slow cooker.
03 - Distribute onion slices, smashed garlic, whole peppercorns, bay leaves, thyme, and corned beef spice packet around the brisket.
04 - Cover and cook on low heat for 6 to 7 hours until the brisket is fork-tender.
05 - Place carrot chunks over the brisket and cook for an additional 1 to 2 hours until just tender.
06 - Melt butter in a large pan over medium heat. Add sliced cabbage, season with salt, and sauté until just softened and vibrant.
07 - Layer sautéed cabbage on top of other ingredients in the slow cooker. Continue cooking on low for 30 to 60 minutes to infuse flavors.
08 - Roast red potatoes in the oven at 220°C until golden and crispy. Do not add to the slow cooker.
09 - Rest the brisket for 10–15 minutes, then slice against the grain. Serve with braised cabbage, carrots, and roasted potatoes. Garnish with parsley or chives and accompany with horseradish sauce.
