Cold Sesame Noodle Salad (Print-Friendly Version)

Tender noodles in sesame-peanut dressing with crunchy veggies—light enough for summer, hearty enough for any table.

# What You'll Need:

01 - 8 oz noodles (soba or rice noodles)
02 - 1 cup shredded carrots
03 - 1 red bell pepper, thinly sliced
04 - 2 green onions, sliced
05 - ¼ cup chopped cilantro (optional)
06 - 1 tbsp sesame seeds, for garnish

→ Sesame Dressing

07 - 3 tbsp soy sauce
08 - 2 tbsp sesame oil
09 - 1½ tbsp rice vinegar
10 - 1 tbsp peanut butter or tahini
11 - 1 tbsp honey or maple syrup
12 - 1 tsp grated fresh ginger
13 - 1 clove garlic, minced
14 - Juice of ½ lime
15 - Optional: sriracha or chili flakes, to taste

# How to Make It:

01 - Cook noodles according to package instructions. Drain, rinse under cold water, and set aside.
02 - In a bowl or jar, whisk together all the dressing ingredients until smooth.
03 - In a large bowl, combine the noodles, carrots, bell pepper, green onions, and cilantro (if using). Pour the dressing over and toss to coat.
04 - Refrigerate for 15–30 minutes to let the flavors meld. Before serving, sprinkle with sesame seeds and a squeeze of lime if desired.
