Place rolled oats, cocoa powder, and a pinch of salt in a mixing bowl. Stir thoroughly to distribute the cocoa evenly across the oats.

In a separate bowl, whisk together almond milk, peanut butter, maple syrup or honey, and vanilla extract. Mix until the peanut butter is fully incorporated and the mixture is smooth.

Add the wet ingredients to the dry mixture. Stir until all oats are moistened and no dry spots remain. The mixture should appear thick.

Divide the oat mixture evenly into airtight jars or containers. Seal and refrigerate for at least 4–6 hours, or preferably overnight, allowing the oats to soften and absorb flavors.

Before serving, stir the oats. Add sliced banana on top and garnish with cacao nibs if desired for added texture and flavor.
