01 - 0.5 cup fresh coriander leaves, chopped
02 - 2 small spring onions, finely chopped
03 - 150 grams dried wheat noodles or 300 grams fresh noodles

→ Chilli Garlic Sauce

04 - 0.5 tablespoon dark vinegar
05 - 1 tablespoon chilli flakes or powder, to taste
06 - 0.5 teaspoon sesame oil
07 - 1.5 tablespoons soy sauce
08 - 4 garlic cloves, minced
09 - 3 tablespoons neutral oil (canola, sunflower, or grapeseed)
10 - 0.5 tablespoon white sugar

→ Optional Garnish

11 - 1 tablespoon crispy chilli oil

# How to Make It:

01 - Boil noodles according to package directions until bouncy, about 3 minutes. Drain using a sieve or colander.
02 - Place chilli flakes, minced garlic, and sugar into a heatproof bowl without stirring. Heat neutral oil in a small pot until shimmering, then carefully pour over the chilli garlic mixture, stirring immediately to combine.
03 - Add soy sauce, dark vinegar, and sesame oil to the bowl, mixing well. Divide the sauce evenly between serving bowls.
04 - Toss the drained noodles with the prepared sauce, ensuring they are fully coated and hot.
05 - Top the noodles with chopped coriander and spring onions. Add crispy chilli oil if desired for extra heat.
