# What You'll Need:

01 - 2 tablespoons olive oil
02 - 2 tablespoons fajita seasoning
03 - 3 boneless, skinless chicken breasts, cut into long strips
04 - 1 medium red bell pepper, cut into long strips
05 - 1 medium green bell pepper, cut into long strips
06 - 2 large onions, sliced
07 - 2 tablespoons butter
08 - 1 cup Tex Mex cheese or cheddar cheese
09 - 8 tortillas
10 - Salsa, for serving
11 - Sour cream, for serving

# How to Make It:

01 - Season the chicken strips with 1 tablespoon of fajita seasoning.
02 - Heat 1 tablespoon of olive oil in a large skillet. Add the chicken and cook for 5-10 minutes until fully cooked and slightly charred.
03 - Remove the chicken from the skillet and wipe the skillet clean.
04 - Heat another tablespoon of olive oil in the skillet. Add the onions and sauté until slightly translucent. Then, add the bell peppers and the remaining fajita seasoning. Mix well and cook for a few minutes until the peppers soften slightly. Add the chicken back into the skillet and mix well.
05 - In a clean skillet, melt a small amount of butter. Place a tortilla in the skillet, moving it around to coat it with butter. Add some of the chicken and vegetable mixture along with about 1/4 cup of cheese. Place another tortilla on top and press down.
06 - Flip the quesadilla and cook until golden brown on the other side. Remove from the skillet and cut into quarters.
07 - Repeat the assembly and cooking steps with the remaining tortillas.
08 - Serve the quesadillas hot with salsa and sour cream on the side.
