Preheat oven and bake tater tots following package directions until golden and crisp.

Heat a skillet over medium heat. Add ground beef, breaking it up until fully browned. Season with salt and pepper. Drain excess fat.

In a large bowl, gently crush baked tater tots. Mix with cooked beef, shredded cheddar, and Monterey Jack cheese until evenly combined.

Heat each flour tortilla in a dry skillet or microwave for 10–15 seconds until pliable.

Place a generous portion of filling in the center of each tortilla. Drizzle chipotle sauce and add a dollop of sour cream.

Fold sides of tortillas, roll tightly from bottom to enclose filling. Place seam-side down in a baking dish, sprinkle extra cheese on top, and bake until cheese melts and bubbles.

Remove from oven. Garnish with diced tomatoes, chopped green onions, and cilantro if desired. Serve warm with extra sour cream and chipotle sauce.
