Cheesy Potato Beef Burritos (Print-Friendly Version)

Ground beef, crispy tots, and melty cheese in warm tortillas—quick, comforting, and full of flavor.

# What You'll Need:

→ Filling

01 - 450 g ground beef (80/20 blend)
02 - 720 g frozen tater tots
03 - 120 g shredded cheddar cheese
04 - 120 g shredded Monterey Jack cheese
05 - Salt, to taste
06 - Black pepper, to taste

→ Assembly

07 - 6 large flour tortillas
08 - 80 ml chipotle sauce
09 - 120 ml sour cream
10 - 40 g diced tomatoes (optional, for garnish)
11 - 2 tablespoons chopped green onions or cilantro (optional, for garnish)

# How to Make It:

01 - Preheat the oven following the tater tot package directions. Arrange frozen tater tots in a single layer on a baking sheet and bake for 20–25 minutes until golden and crisp.
02 - Heat a skillet over medium heat and cook ground beef for approximately 8 minutes until fully browned. Season with salt and black pepper, then drain excess fat and set aside.
03 - Allow baked tater tots to cool slightly, then crush them gently into chunky pieces. In a large mixing bowl, combine the crushed tater tots, cooked beef, cheddar cheese, and Monterey Jack cheese until evenly distributed.
04 - Heat flour tortillas in a dry skillet for 30 seconds on each side or microwave them wrapped in a damp towel for 15 seconds to increase pliability.
05 - Place a portion of the filling in the center of each tortilla. Drizzle with chipotle sauce and add a spoonful of sour cream. Leave a 5 cm border around the edges to ease rolling.
06 - Fold in the sides of the tortilla, then roll from the bottom to enclose the filling tightly. Place each burrito seam-side down in a baking dish. Sprinkle additional cheese on top if desired.
07 - Bake the assembled burritos for several minutes until the cheese melts and heated through. Garnish with diced tomatoes and chopped green onions or cilantro, if using.

# Additional Tips:

01 - Do not overfill tortillas to prevent tearing and ensure proper sealing.
02 - Crush tater tots gently to maintain some texture and avoid a mashed consistency.
03 - Warming tortillas before filling is essential to avoid cracking when rolling.
04 - Layer cheese both inside the filling and on top for maximum melt and flavour.
05 - Let burritos rest briefly after baking to allow filling to set before serving.
