01 - 1 lb carrots, peeled and cut into fry-sized sticks
02 - 1.5 tbsp olive oil
03 - 0.5 tsp smoked paprika
04 - 0.5 tsp garlic powder
05 - Salt and pepper, to taste

→ Yogurt Harissa Dip

06 - 0.5 cup plain Greek yogurt
07 - 1–2 tsp harissa paste (adjust to taste)
08 - 1 tsp lemon juice
09 - Pinch of salt

# How to Make It:

01 - Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
02 - In a bowl, toss carrot sticks with olive oil, smoked paprika, garlic powder, salt, and pepper.
03 - Spread the carrots in a single layer on the baking sheet. Roast for 20–25 minutes, flipping once halfway through, until golden and slightly crispy on the edges.
