Set oven to 190°C and allow to fully preheat before baking.

Melt butter in a large pan over medium heat. Add onions and cook slowly, stirring every few minutes, for 30–40 minutes until onions are deeply golden and fully caramelized. Season with salt and black pepper to taste.

Roll out the puff pastry on a lightly floured work surface. Cut into 5 cm squares or circles.

Arrange pastry pieces on a parchment-lined baking tray. Place a small amount of goat cheese in the center of each. Top with a generous spoonful of caramelized onions and a pinch of fresh thyme.

Bake in the preheated oven for 12–15 minutes, until pastry is well-risen and golden brown. Remove from oven to cool slightly.

Transfer bites to a serving platter. Garnish with additional fresh thyme and serve warm. Optionally, drizzle with honey for added sweetness.
