01 - 1 lb beef stew meat, cut into bite-sized pieces
02 - 1 tablespoon olive oil
03 - 4 cups beef broth
04 - 1 can (14.5 oz) diced tomatoes, undrained
05 - 2 medium carrots, sliced
06 - 2 celery stalks, chopped
07 - 2 medium potatoes, diced
08 - 1 cup green beans, trimmed and cut into pieces
09 - 1/2 cup frozen corn
10 - 1 small onion, diced
11 - 2 garlic cloves, minced
12 - 1 tsp dried thyme
13 - 1 tsp dried parsley
14 - Salt and pepper to taste

# How to Make It:

01 - Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook until browned on all sides. This step adds depth of flavor to the soup.
02 - Place the browned beef into the crockpot.
03 - Add carrots, celery, potatoes, green beans, corn, onion, and garlic to the crockpot. Pour in the beef broth and diced tomatoes (including their liquid).
04 - Sprinkle in thyme, parsley, salt, and pepper. Stir to combine all ingredients.
05 - Cover and cook on low for 8–9 hours or high for 4–5 hours, until the beef is tender and the vegetables are cooked through.
