Brown chopped bacon in a large skillet over medium heat until crisp. Remove with a slotted spoon and set aside. Carefully drain all bacon fat from the skillet.

Add ground beef and chopped onion to the empty skillet. Sauté over medium heat, breaking beef apart with a spatula, until beef is thoroughly browned. Drain excess fat.

Reduce the heat to low. Return cooked bacon to the skillet. Stir in tomato paste, Worcestershire sauce, mustard, and cream cheese. Mix until the cream cheese is fully melted and incorporated.

Lay out tortillas. Sprinkle each with approximately 30 grams shredded cheddar. Spoon equal portions of the beef mixture over one half of each tortilla. Fold tortillas to enclose filling.

Heat a clean skillet or griddle to medium. Lightly spray with oil or melt a small amount of butter. Cook quesadillas in batches 2–3 minutes per side, until golden brown and cheese melts.
