→ Chicken Marinade

01 - 680 g boneless, skinless chicken thighs
02 - 45 ml extra virgin olive oil
03 - 4 cloves garlic, finely minced
04 - 1 tbsp dried oregano
05 - 1.5 tsp smoked paprika
06 - 1 tsp ground cumin
07 - 0.5 tsp ground coriander
08 - 1 tbsp fresh lemon juice
09 - 1 tsp lemon zest
10 - 1 tsp sea salt
11 - 0.5 tsp freshly ground black pepper
12 - Pinch ground cinnamon

→ Tzatziki Sauce

13 - 370 g full-fat Greek yogurt
14 - 1 medium cucumber, seeded and finely grated
15 - 2 cloves garlic, finely grated or minced
16 - 1 tbsp fresh lemon juice
17 - 30 ml extra virgin olive oil
18 - 2 tbsp fresh dill, finely chopped
19 - 0.5 tsp salt
20 - 0.25 tsp freshly ground black pepper

→ Assembly

21 - 4–6 pita breads or flatbreads
22 - 1 cucumber, diced
23 - 2 medium tomatoes, diced
24 - 1 red onion, thinly sliced
25 - 65 g kalamata olives, pitted and halved
26 - 40 g feta cheese, crumbled
27 - Fresh parsley or mint, chopped, for garnish
28 - Lemon wedges, for serving

# How to Make It:

01 - Combine extra virgin olive oil, minced garlic, dried oregano, smoked paprika, ground cumin, ground coriander, lemon juice, lemon zest, sea salt, black pepper, and cinnamon in a large bowl. Add chicken thighs, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour or ideally overnight.
02 - Preheat grill or heavy skillet over medium-high heat. Remove chicken from marinade and grill for 6–7 minutes per side until fully cooked with a golden char. Rest chicken for 5 minutes, then slice thinly.
03 - In a bowl, mix Greek yogurt, grated cucumber (squeeze excess moisture), grated garlic, lemon juice, olive oil, chopped dill, salt, and black pepper until smooth. Set aside for assembly.
04 - Heat pita breads briefly on a dry skillet or grill until warm and flexible. Add sliced grilled chicken to the center, top with diced cucumber, tomatoes, red onion, olives, feta, and a generous spoonful of tzatziki. Garnish with parsley or mint.
05 - Wrap or fold the pita around the fillings. Serve immediately with lemon wedges on the side.
