Place rolled oats, almond milk, diced apple, peanut butter, honey or maple syrup, ground cinnamon, vanilla extract, and a pinch of salt in a mixing bowl. Stir thoroughly until combined.

Transfer the oat mixture into a jar or airtight container. Seal securely and refrigerate for at least 4 hours or overnight to allow absorption and melding of flavors.
