02 - 1 tablespoon red wine vinegar

06 - 3 mixed bell peppers, sliced
07 - 1 large yellow onion, sliced
08 - 1 teaspoon kosher salt, or to taste
09 - 1/2 teaspoon freshly ground black pepper, or to taste
10 - 6 Italian sausages (hot or sweet), sliced into quarters

# How to Make It:

01 - Preheat oven to 200°C. In a large bowl, whisk together extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, and crushed red pepper flakes until well combined.
02 - Add sliced bell peppers and onion to the bowl. Season with kosher salt and freshly ground black pepper, then toss until vegetables are evenly coated with the oil and spice mixture.
03 - Transfer coated peppers and onions into a 33x23 cm baking dish. Arrange quartered sausage pieces evenly over the top of the vegetables.
04 - Place the dish in the preheated oven and bake for 40 to 45 minutes, or until the sausages are fully cooked and vegetables are tender, stirring halfway through for even roasting.
05 - Remove from the oven and immediately top with freshly sliced basil. Serve hot, either on its own or accompanied by your choice of side.
